There’s a new book coming out soon by Dr Miriam Grossman, called Trans Nation. She describes gender vs sex, thusly:—

That is, it’s what you view yourself as or what you think you are but not what you actually are.
Again, back to my anorexic analogy from many years ago.
Anroexics view, think, feel and see themselves as fat. They look in the mirror and see a fat person. But it’s all in their heads. It’s not real.
Transgender is exactly the same.
They view, think, feel and see themselves as a woman. They look in the mirror and see a woman. But again like the anorexic, it’s all in their heads. It’s not real.
There is no difference. Both see something that isn’t real. It’s a delusion. A mental health issue. Just like when someone dresses up and walks around thinking he’s Napoleon
What you think your are or what you perceive yourself to be is not what you are, in reality. What you are is determined not by what you think or believe but what you are biologically.
And there’s the problem. Reality.
But there’s another point to this.
Years ago the gay community said that, that is the way they are. That being gay wasn’t a choice they were born that way. Ok I think probably most people would accept that. It is what it is, you are what you are. And to be honest, no one cares.
But now we’re told that everything is fluid and that preferences can change.
